Fermented Ketchup
Ingredients

cups
canned tomato paste
preferably organic
¼
cup
whey
1
tablespoon
sea salt
½
cup
maple syrup
¼
teaspoon
cayenne pepper
1½
teaspoons
garlic powder
½
cup
fish sauce
Instructions
In a medium-sized bow, mix everything together until well combined.
Pour into a
quart-sized mason jar
, making sure to leave an inch between the top of the jar and the ketchup.
Cover (either with the standard metal lids of the jar or with a
Pickle Pipe
), and leave on the counter for 2 days before transferring to the fridge.
