Thanksgiving Menu.

I have been known to start planning my Thanksgiving dinner in the end of September…..true story. Ironically, these were the years that I relied on gravy packets and boxed stuffing to satiate us during the holiday, neither of which requires much time or planning. Since we started eating differently, I haven’t really had a chance to make much of Thanksgiving and it’s been at someone else’s house.

This year, though, is going to be different.

We’re not exactly sure at this point where we’ll be the day of as it seems more often than not, holidays get planned at the last minute. But to ensure that we’ll at least have some tasty leftovers to fill our fridge, I’m planning a little Humble family Thanksgiving feast just for the three of us. Here are a few recipes I’ve collected.

  1. Grill Roasted Turkey – E used to grill a turkey breast every year for us and it always turned out really well. We skipped it last year, but this year we picked up a fresh turkey from our CSA and will be grilling the entire thing. Grilling works well not only because it tastes absolutely amazing, but it also saves space in the oven for other T-day concoctions!
  2. Mashed Potatoes – With cream and cream cheese and lots of salt and butter. That’s really the only way to have them.
  3. Reduction Sauce – No pan to collect turkey juices means no standard gravy, but a reduction sauce is just as good and, thanks to a surplus of chicken bones in the freezer, I now have chicken stock coming out of my ears.
  4. Grain-Free Homestyle Stuffing – This is the only grain-free stuffing recipe I’ve found that doesn’t include sausage. Not that there’s anything wrong with sausage….it was just an extra step I didn’t want to have to make. I’m laaaaazy.
  5. French Green Bean Casserole with Crispy Shallots – One thing I haven’t been able to find a good substitute for since switching to this way of eating is green bean casserole. The one I made last year was awful, so I’m keeping my fingers crossed for this year.
  6. Pumpkin Pie with Almond Flour Crust (both from NT) – I’ve never made this one before either, but I have a lot of pumpkin puree and a lot of almonds…so it’s a win-win situation. 🙂
  7. And, of course, I’ll pick up some gelatinous cranberries for E because he only likes his cranberries in the shape of a can.

Hooray for food! That’s really what I should call my blog anymore…
